Badrijani is a beloved cold starter of Georgian cuisine. Eggplant is sliced into thin strips, fried until soft, then spread with a savoury paste of walnut, garlic, coriander and spices and rolled up. The paste is often seasoned with yellow coriander, vinegar or pomegranate juice. Each roll is topped with pomegranate seeds, which add colour and a light tang.
