The table fills with ten kinds of cheese, honey and clotted cream, olives, hot simit, menemen, and strong tea on top, and you can sit there for hours. On the other side there is Iskender kebab, lahmacun, pide, kunefe. Each one demands its own master. With a good kunefe the cheese stretches, the top turns crisp, and the syrup is poured on hot.
